
This was so quick and easy, and used up some leftover ingredients that we had from making burritos earlier in the week.
- Mini Corn Tortillas
- Eggs Fried Sunny Side Up
- Black Beans
- Tomato
- Scallions
- Tomatillo Salsa
- Cilantro
- Sea Salt
Make sure to heat the pan with olive oil at medium heat before adding the eggs, so they don’t stick. After seasoning with salt and pepper, I covered the pan and lowered the heat, so that the top of the whites cook through, without burning the bottom.
Chop up the tomato, cilantro, and scallions (option to use red onion).
Once you place the egg on the tortillas, load up the toppings and enjoy!
PS: My husband likes his eggs fried but does not like dairy. For my tacos, I use scrambled eggs and add a spoonful of sour cream.
